Plum Cake Recipe

This is a delicious way to use up some of your plums after harvest

INGREDIENTS:

To make one cake ( Serves 4 )

  • 4oz/100g self-raising flour

  • 4oz/100g sugar

  • 4oz/100g softened butter

  • 2 eggs

  • 5 plums halved and stones removed

METHOD:

-Preheat oven to gas mark 5 / 190 c

-Whisk the butter and sugar together

-Add the eggs and flour

-Whisk until the batter has a light creamy consistency

-Pour the batter into a greased / non stick cake tin

-Put the plums on top of the unbaked cake

-Sprinkle some sugar over the top

-Bake in the oven on middle shelf for 15-18 minutes

-You can check if the cake is cooked through by sticking a toothpick into the centre, if it comes out clean then the cake is cooked. If you notice batter sticking to the toothpick then cook for a little longer.

I enjoy mine with a cup of tea!
